A few weeks ago my mother in law saw Sam’s Club was having a huge sale on their tubs of Pillsbury Sugar Cookie Dough. Big sale as in it was like 53 cents total. She went ahead and bought two tubs just for the heck of it. At that price, why not!? We were meeting her there for something and she’s like here ya go and told us about the deal and all.
I am not one that makes sugar cookies a lot but I couldn’t pass up a 53 cent tub. I just prefer something with a little more oomph most of the time – sweetness oomph I guess. Like my in your face Best Almond Toffee Bark recipe. Drool!
I wasn’t really in the mood to make a billion sugar cookies. They just aren’t my thing but on the other hand, cheesecake is. I absolutely adore cheesecake! Combining something I love with this ginormous tub of sugar cookie dough fit the bill.
You can even give them a Valentines Day flair by taking a strawberry and slicing it into several medium thick size pieces. Then take a small heart cookie cutter and cut out heart shapes on each strawberry slice. I like getting some of the red and white meat of the strawberry in each cut-out. It almost gives in an ombre effect which I love.
This recipe can make quite a bit of cream cheese filling. I like to take the extra and fill strawberries with it. It’s like having bite size strawberry cheesecake that’s halfway healthy. I can dream, right?
These tarts go great in the freezer. Especially if you are using them later that day for a special party or event. I actually prefer mine frozen and so do the kids. Yum!
Sugar Cookie Cream Cheese Tarts
- 1tube sugar cookie dough
- 8oz cream cheese
- 1.5tsp vanilla extract
- 2tbsp heavy cream
- 1 3/4cup powdered sugar
- 2-5 strawberries
- Preheated oven to 350 degrees F. Grease a mini muffin pan with cooking spray.
- Placed rounded half tablespoon full balls of cookie into each mini muffin pan cup. Roughly, about an inch in size. Bake the sugar cookie dough for 12-14 minutes. Let cool 2 minutes.
- Take a blunt object like the end of a rolling pin and press down each sugar cookie center to make a cup. After about 5 minutes twist the cups out and let cool on a wire rack.
- While the sugar cookie cups are cooling beat the softened cream cheese and heavy cream together until smooth. Slowly add in the powdered sugar and vanilla, beating on low. Pipe mixture into each sugar cookie cup.
